How to Cook Brussel Sprouts You Will Crave

That’s a title I never thought I’d write. But the truth is, I DO crave them now. I don’t remember ever eating brussel sprouts as a child. Or as an adult. But as I’ve branched out in the vegetable world and the culinary world over the past few years, I eyed them several times in the grocery store. They were objects of beauty, like the leek, for instance. They were the stuff of still life paintings. They were shrouded in mystery, my never having consumed them.

I’d not missed the disdain they possess in our society. People speak of them in the same terms as paying taxes, or going to the dentist. Not fondly. So the first time I brought some home, I kept my expectations low. Uncertain how to cook them, and not having done any obligatory internet searching for ideas, I just purchased a steam-bag of them and popped them in the microwave. I won’t describe the taste for you because the texture was so lacking it overshadowed all else. Needless to say, that didn’t work out. I avoided them in the produce section. I gave them a side glance as I passed them by, as if I could make them sorry. Months passed, and I begin to wonder again at their beauty. They look like little mini-cabbages, and as every mini version of something big, I find this endearing. Surely there had to be something to do with them, if only to be able to present them on the table in all their cuteness.

So I purchased a bag and brought them home, then did some searching. I’ve finally settled on a recipe inspired by this one at 101 Cookbooks. I’d struck gold. You simply clean and half them, simmer them face down in a bit of olive oil in a covered pan for a few minutes until temder, them turn up the heat and sear them until crusted with golden brown, then stir to sear the other sides. Salt, pepper, some cheese {I like parm with them}, and consume immediately.

Now, I’ve cooked them over and over. There is no need to look at a recipe after you make them once, which is my favorite way to cook {recipe-less}. They end up as golden-brown beauties, slightly seared on the outside and tender within, delicious when accented with the slightest bits of shaved parmesan. I serve them to my husband and kids, who gobble them. I made them for extended family near New Year’s and one young niece asked for seconds. I consider them to be a huge success.

    Yum! I love, love, love Brussels sprouts. I like all kinds of vegetables, even the ones that most people hate. Glad you found a good way to prepare them.

    Probably they are healthy. And delicious. But I can’t get them down. Not since I was traumatized by having to eat them in childhood. Do I have it in me to give them another try? :)

      You just must try this recipe–it will make anyone love them. Just don’t skimp on the cheese!

    I posted on your homeschool blog before here, and visited your blog by linking to your name on a comment you left on “Life in Grace” about the “margins.”

    I have now read a lot of your posts, and I can say that I have never read a blog that so much sounds like I wrote the posts myself. We have much of the same interests, and proclivities, and we both have young children and are homeschooling while having these interests too. Our book list is almost identical and our reading methods as well. You will enjoy the Well Educated Mind….I began with the History list with a friend….still only on Herodutos though!

    My name is Ginger, I live in California, Southern, not Northern. My children are almost 5 and 7 and I have been married for 8 years. I have stayed at home since getting married, moving and doing contracting to our home during my children’s baby years. Now that that they are no longer babies, and I am officially homeschooling a first grader, as opposed to play homeschooling for Kindergarten my house has taken a back seat, for a time.
    The GK Chesterton quote made me feel better about my “twenty hobbies, or should I say distractions.”

    We moved five minutes from our Church, Valley Presbyterian Church(PCA) and seven from my husbands work. It’s not the rural countryside that I pine after, but I am getting chickens this Summer in spite of living right smack in the middle of the city, on a .33 of an acre. I miss my growing up in the rural areas with horses and chickens and orchards and gardens but we wouldn’t trade it the three hours more we see of daddy, by not having to commute.

    We chose well, and at this point, 8 years later, I run into someone either from the neighborhood, or church on our outings. it took awhile to adjust, but it’s become home now, and I am content.

    Anyway, you must think it somewhat odd/strange/loony to have a complete stranger tell you about her life, unasked at that! I have never done this before, and quite in spite of myself will hit send anyway, and hope that we can be friends.

      Hi ginger, thanks for visiting! I’ve heard southern california is beautiful. I hope you have avacado trees.I would so grow those if I lived there! I have to buy overpriced ones in our grocer if I want fresh ones, and they are never ripe the moment I need them. So what kind / style of homeschooling do you do? We also attend a PCA church, by the way, though we were at a reformed batiste church when we lived on charleston.

        This year I plant some fruit trees, and I am thinking of an avacado tree as well. I’m in for some peaches, a lime and lemon trees. My house is part of what was the old orchard….Literally the entire Valley was a citrus orchard. Most of the homes in my neighborhood have an old tree, however I am the eighth owner of my home and somebody thought it was a good idea to take our out…..too bad. However we are not without, we are in full blown orange season, and about once a week, their is a knock at the door with a bag of oranges….
        I tend toward the classic model…I pretty much follow Susan Wise Bauer’s “A Well Trained Mind.” I was blessed enough to hear her speak at one of her very last conferences ever….Her seminars were so good. She has a wonderful way of giving you an idea of the path, and also the broad and over arching view of where one is headed. I like that she doesn’t take herself to seriously, as it is so easy to do when you become a little too narrowly focused on the details of homeschooling.
        My focus is primarily language which means heavy on the reading. My daughter read her first sentence this last week, and I was so grateful to God for that miracle of language that he gave us. I can’t think that there is anything that is a fun as teaching one’s child to read and see that miracle take place when it clicks….I say miracle, because when you see what they have to figure out in order to blend and all the memory and mouth muscles memory to make sounds it is just nothing but evidence that we are pre-wired to express ourselves….Now that I have two reading I am so excited.
        Anyway…What have you begun with?
        I’m in a book club with a good friend at church….We get together once a month to discuss that and other things too. I did read the “odyssey” though with Edie…..Great book! Great Book!

          I’ll be doing classical conversations. For reading we are using explore the code. I’m going to focus on reading and math all summer, as given the heat around here in the summer we’ll school some then and take mild days off. Love bauer’s books, jealous you got to hear her!
